Once the gold is loaded and you are out of the building, the GPS will try to send you across Los Santos in the assigned car. You do not have to treat that route as law. An NPC vehicle pulls police attention away from your route, which gives you room to get airborne or move through a tight street. It is a small cost beside the contract reward. Do not wait until everything is already crowded around you; calling it early usually works better.
